Jamie, thanks again for spending some time in Elgin and your valuable feedback. One thing you said sort stuck in my mind and I was hoping you could clarify/elaborate. When we were tasting grapes, you mentioned that when you can taste the fruitiness it’s already too late. I filed it away as a off-the-cuff remark and wanted to ask you about it later; which I never did. Is there some science behind picking before you taste the fruitiness?
