Symington Estates uses a mechanical method with silicone feet, in the lagares that is supposed to closely simulate foot treading as well.
I know that the Port market has been challenged for quite some time now…maybe someone needs to do something to change the image of the process. Mechanization is no fun, and the picture of out-of-shape hairy guys in their shorts does not sell well either. I bet if the video was of buff young Portugal beachgoers in the tank, the stuff would start flying off the shelves…
Hmmm…interested in starting an artisanal brand?
