Here’s a short film of me tasting the new (2011) release of Gonzalez Byass’ Tio Pepe Fino En Rama. It’s a sherry taken from the cask in spring when the flor is at its thickest. It’s then bottled unfined and unfiltered for early drinking. Remarkable stuff.

I know GB say don’t leave it for more than 3 months, but last year I kept a bottle for well over 3 months. Until the middle of October. I think it had actually improved. Thrown its haze and on palate was just as complex but cleaner and shaper than before…
I love the way I can drink gallons of it with barely a hangover. Now that’s a USP.
are you allowed to tell us where to obtain it?
Lea and Sandeman and The Wine Society had it last year. L and S certainly have it again.
Just tried this last night. Fabulously rich and flavoursome. I feel very ‘of the moment’, as Anthony Rose also picked this up in his column. Perfect for now.
