This MCC (Methode Cap Classique, a term used for traditional method sparkling wines from South Africa) deserves a post of its own. It’s 15 years old (almost 16) and it’s drinking beautifully, with no sign of tiredness.

50% of this was fermented in barrels, and it spent 4 years on the lees. Toasty but not too developed with lovely white peach, apricot and citrus notes. There are also complex vanilla, brioche and almond characters, with genuine complexity and finesse. Real delicacy, with a subtle creaminess: this has settled into stylish maturity. 93/100
