It\u2019s run by Erick and Michelle Se Sousa, and was established by Erick\u2019s father and mother in the 1950s. Their speciality is that they work organically and biodynamically, and also use quite a few barrels. Ferments are wild for the alcoholic fermentation, and malolactic is always done. The cuv\u00e9e Umami is also lovely, made from old vineyards and fermented entirely in barrel, although it is quite expensive. They use no herbicides in the vineyard, and work using organics and biodynamics, but without certification. \u2018The idea is to make sure the soil is alive,\u2019 says Antoine. They are also working on replanting vineyards with vines produced by selecting cuttings from their older vines, rather than using clones.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-medium wp-image-14621\" src=\"http:\/\/www.wineanorak.com:\/wineblog\/wp-content\/uploads\/2016\/05\/pierrepaillard1-500x333.jpg\" alt=\"OLYMPUS DIGITAL CAMERA\" width=\"500\" height=\"333\" srcset=\"https:\/\/www.wineanorak.com:\/wineblog\/wp-content\/uploads\/2016\/05\/pierrepaillard1-500x333.jpg 500w, https:\/\/www.wineanorak.com:\/wineblog\/wp-content\/uploads\/2016\/05\/pierrepaillard1-150x100.jpg 150w, https:\/\/www.wineanorak.com:\/wineblog\/wp-content\/uploads\/2016\/05\/pierrepaillard1-400x266.jpg 400w, https:\/\/www.wineanorak.com:\/wineblog\/wp-content\/uploads\/2016\/05\/pierrepaillard1.jpg 600w\" sizes=\"auto, (max-width: 500px) 100vw, 500px\" \/><\/p>\n<p>Vinification in 90% stainless steel and 10% barrel. \u2018Bouzy gives rich and round wines,\u2019 says Antoine, \u2018so we want to keep the purity.\u2019<\/p>\n<p>We went down to the cellar where we had a look at the same reserve wines in different containers. It was a Pinot from 2014, and in a concrete egg it was very bright, direct and mineral, while from terracotta it was fruiter, more rounded and a bit shorter. \u2018Terracotta is too up and down,\u2019 Antione explains. \u2018It can go from the worst wine to the best.\u2019<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-medium wp-image-14622\" src=\"http:\/\/www.wineanorak.com:\/wineblog\/wp-content\/uploads\/2016\/05\/pierrepaillard2-500x333.jpg\" alt=\"OLYMPUS DIGITAL CAMERA\" width=\"500\" height=\"333\" srcset=\"https:\/\/www.wineanorak.com:\/wineblog\/wp-content\/uploads\/2016\/05\/pierrepaillard2-500x333.jpg 500w, https:\/\/www.wineanorak.com:\/wineblog\/wp-content\/uploads\/2016\/05\/pierrepaillard2-150x100.jpg 150w, https:\/\/www.wineanorak.com:\/wineblog\/wp-content\/uploads\/2016\/05\/pierrepaillard2-400x266.jpg 400w, https:\/\/www.wineanorak.com:\/wineblog\/wp-content\/uploads\/2016\/05\/pierrepaillard2.jpg 600w\" sizes=\"auto, (max-width: 500px) 100vw, 500px\" \/><\/p>\n<p>We tasted a range of wines. The regular NV, called Les Parcelles, is a blend of 60% Pinot Noir and 40% Chardonnay with a low-ish dosage of 3.5 g\/l. This wine, a blend of 2011 and 2010, is rounded, fruity, pure and very bright. Les Maillerettes Bouzy Grand Cru Blanc de Noirs 2010 is sensational: fine and expressive with Pinot fruitiness combined with a strong sense of terroir. Les Mottelettes Bouzy Grand Cru 2009 is a Blanc de Blancs and has a lovely citrus core as well as purity and texture. And the Oenoth\u00e8que Bouzy Grand Cru 2004, disgorged in November, is complex, stylish, generous and also quite fine.
